Serves 6-8
Ingredients
1 & ½ ripe avocados
1 & ½ cups fresh or frozen blueberries
1 x 395g tin of sweetened condensed milk
½ teaspoon lemon zest
400ml cream
Method
In a blender or food processor, blitz the avocado, blueberries, sweetened condensed milk and lemon zest until smooth.
In a large bowl or bowl of a stand mixer, beat the cream until stiff peaks form. Gently fold the blueberry mixture into the cream until well combined.
Pour into a large loaf tin or container, cover and place in the freezer for at least 8 hours.
